Not very many, I usually just buy a few packets of rigs. Once I've lost 2-3 I just start cobbling things together, few dropper loop knots with short lengths of line to hooks. Nothing fancy, gets expensive when you lose rigs with clips, springs and other blingy bits, besides more components mean more possible failure points.
 
I like up and over wishbones rigs, one per rod, and a spare, most of the time.
If one of them gets mangled I've got enough components in my tackle box to make a replacement whilst still fishing.

I generally decide what rig I'm going to use before I go fishing but I make mine so that, if necessary, by using the right components I can change a two hook up and over with size 2 hooks into a single 4/0 clipped down with little effort.
It gives me the option of changing both venue and target species.
