Looking for thoughts on whether or not they are sustainable to eat?

I would think so round here, they are just a pain to prep saw a chap use a small axe and pliers I did wonder if a minute in boiling water made them easier to skin like doggies.Looking for thoughts on whether or not they are sustainable to eat?
